
Whenever I want an ordinary day to feel a little more delicious, Shrimp Pineapple Fried Rice is the sort of recipe I reach for. This is the kind of centerpiece that makes dinner feel complete without needing a crowded menu. Set it out, call everyone to the table, and enjoy it while the conversation is lively.
Ingredients
- 1 1/2 cup short grain rice
- 1 1/2 cup water
- 1 tsp neutral oil
- 16 ounce shrimp
- 3 tbs neutral oil
- 1 fresh pineapple, cubed
- 2 cloves garlic, minced
- 1 cm fresh ginger, minced
- 1 jalapeno seeded and chopped fine
- 6 green onions, sliced
- 1 tbs fish sauce
- 2 tbs soy sauce
- 1 tbs butter
- 1 egg, whisked
Instructions
- In the bottom of a pan heat 1 tsp oil and stir in the rice to coat for 30 seconds then add the water, bring the water to a boil then lower the heat and cover let the rice cook until no more water is left. Let cool completely in the fridge before using in the fried rice. You can also use day old rice.
- Once you cube the pineapple leave the shell inside the fridge until it’s time to serve.
- Heat 1 1/2 tbs neutral in a large pan then add the shrimp cook until no longer opaque, remove from the pan.
- Add 1 1/2 tbs neutral oil then add a 1-cm piece of ginger, 2 cloves of garlic, jalapeño, and 6 green onions sauté for 30 seconds then add the cooled rice.
- Break the rice then add 1 tablespoon of fish sauce and 2 tablespoons of soy sauce stir it in while the rice is getting heated, add the pineapple and shrimp and finish stirring and frying the rice.
- Adding the egg is optional! If you wish to lower the heat push the rice to the edges and make a well in the middle, melt 1 tbs butter then add the whisked egg and cook quickly. Once cooked stir within the rest of the rice.
- Serve on the pineapple shells and garnish with fresh cilantro.
