Ingredients
Recipe for one omelette
- 4 ounces goat cheese, plain
- 1 tbs sour cream
- 2 tbs parsley, chopped fine
- 1 tbs chives, chopped
- Zest of one lemon
- Black pepper
- 3 eggs, beaten
- Dash of salt
- 1 tbs butter
Instructions
- Make the cheese filling by mixing all the ingredients (I recommend taking the goat the cheese ahead of time so it’s easier to work with. Place the cheese mixture in a piping bag.
- Beat the eggs then run through a strainer, that step is impotent to achieve a smooth soft delicate omelette.
- Melt the butter in a non stick pan on low then add the eggs with a spatula work in a circular motion until almost set. Turn off the heat!
- Pipe in the cheese and carefully start rolling the omelette into a cylinder. This is the trickiest part of making the omelette. Once rolled turn the seam down, turn the heat on for a few seconds, it should be fluffy from the outside and creamy in the middle. Transfer to your prepared plate, run a piece of butter on top to give the omelette that glossy finish.
- For topping I chose to toast some focaccia I had and crumbled or you can top with 1 tablespoon of chives only or leave it plain.
