French Omelette

Ingredients

Recipe for one omelette

  • 4 ounces goat cheese, plain
  • 1 tbs sour cream
  • 2 tbs parsley, chopped fine
  • 1 tbs chives, chopped
  • Zest of one lemon
  • Black pepper
  • 3 eggs, beaten
  • Dash of salt
  • 1 tbs butter

Instructions

  1. Make the cheese filling by mixing all the ingredients (I recommend taking the goat the cheese ahead of time so it’s easier to work with. Place the cheese mixture in a piping bag.
  2. Beat the eggs then run through a strainer, that step is impotent to achieve a smooth soft delicate omelette.
  3. Melt the butter in a non stick pan on low then add the eggs with a spatula work in a circular motion until almost set. Turn off the heat!
  4. Pipe in the cheese and carefully start rolling the omelette into a cylinder. This is the trickiest part of making the omelette. Once rolled turn the seam down, turn the heat on for a few seconds, it should be fluffy from the outside and creamy in the middle. Transfer to your prepared plate, run a piece of butter on top to give the omelette that glossy finish.
  5. For topping I chose to toast some focaccia I had and crumbled or you can top with 1 tablespoon of chives only or leave it plain.
