The Marinade

The Marinade

My favorite recipes have a way of making people linger at the table, and The Marinade encourages exactly that. I would set this in the middle of the table and let everyone help themselves. The one-pan method leaves more time for the table and less time standing over the sink.

Ingredients

  • 60 lb lamb chops a little bit over 1 kilo

The marinade

  • 1 medium onion, quartered
  • 2 cloves garlic
  • 1/3 cup olive oil
  • 3/4 tbs salt
  • 1 tsp black pepper
  • 1 tbs paprika
  • 1 tbs lemon juice

Bottom of the pan

  • 2-3 potatoes, sliced thick
  • 1 large green bell pepper
  • 1 large carrot, cut thick
  • 1-2 tomatoes, quartered

Instructions

  1. Preheat oven to 350F.
  2. At the bottom of a baking dish or pan lay the vegetables in a single layer.
  3. To make the marinade you need to blend the onion in a food processor until it looks like a paste then add the cloves of garlic and blend again. Place the blended onion garlic in a bowl add the rest of the ingredients and stir well.
  4. Add some of the marinade to the vegetables and spread to coat.
  5. Using a mallet flatten the lamb chops slightly then add to the marinade and massage so it’s coated. Arrange the lamb chops on top of the vegetables pouring the rest of the marinade on top, add 2 cups of water.
  6. Cover the pan with parchment paper and foil tightly. Bake for 2 hrs and 30 minutes.

Notes

  • Depending on where you source your lamb chops from cooking time might vary. After 2 hours check if it needs extra cooking add additional time you can also check if it needs more water. Always close tightly after checking. Enjoy.
