Sautéed Dandelion ~ هندبة

Have you heard of dandelion greens? A lot of people don’t pay attention to these greens, and if they did, they wouldn’t know what to do with them! Well, I’ve come to the rescue. Another green you can add to your diet, so delicious and tender, and full of benefits. It’s one of my favorites, and I hope you get to try it.

Ingredients

  • 1 bunch dandelion
  • 2 small onion sliced
  • 1/2 tsp baking soda
  • 1/4 cup olive oil
  • 1/4 tsp black pepper, 1/4 tsp seven spices, 1/2 tsp ground cinnamon, salt
  • 2 tbsp water

Instructions

  1. 1- start by going through the bunch of dandelion, removing any yellow or brown leaves. Chop about 1/2 inch and rinse thoroughly a couple of times to remove any dirt.
  2. 2- in a 6 quart pot add the dandelion, enough water to cover and 1/2 teaspoon of baking soda. Cover and boil for 5 minutes ( time it once the water starts boiling ). Once it’s done strain wash with cold water to stop the cooking, between the palms of your hand squeeze out the excess water.
  3. 3- in a pan add 1/4 cup of olive oil, onion and a little bit of salt and sauté on medium heat, once the onion becomes almost transparent add the dandelion, spices and a 1/4 tsp salt, stir and cover. Let cook on low for a couple of minutes, uncover add the 2 tbsp water, cover and cook for another 5 minutes. Squeeze some lemon juice and enjoy with pita bread or on it’s own next to grilled fish or chicken.

Notes

  • Always start with less salt. You can always add more!
