Strawberry Cobbler

This strawberry cobbler is a warm, simple dessert worth making again.

Ingredients

  • 2 lb strawberries hulled and halved
  • 2 tablespoons granulated sugar
  • Zest of half an orange + 2 tbsp fresh orange juice

Topping

  • 2/3 cup self-raising flour
  • 1/3 cup plain flour- I used almond flour
  • 1 egg lightly beaten
  • 1 tbs vanilla
  • 1-2 tablespoons milk
  • 1 tsp raw sugar
  • 50 g unsalted butter cubed+ 2 tbs

Instructions

  1. Let’s start this week on a sweet note. I love cobblers so easy to make, especially if you have fruits that you don’t know what to do with! And since we are in strawberry season, what better fruit to use. I adjusted the recipe by using almond flour and not using sugar in the topping. Hope you get to enjoy this recipe 🍓🍓🍓.
  2. 1- preheat oven to 350 F, place the strawberries in a pan add sugar, orange peel, and orange juice. Cook for 5 minutes on low heat, stirring once.
  3. 2- Butter a 2 liter oven proof baking dish generously, spread the strawberries and set aside.
  4. 3- In a separate bowl add the flour, almond flour, and butter and work the mixture between your fingers until it resembles bread crumbs. Make a well in the center , add the egg and vanilla, using a flat-blade knife work the egg into the mixture, add enough milk until the mixture comes together.
  5. 4- drop spoonfuls on top of the strawberries. Sprinkle 1 teaspoon of raw sugar, bake for 40 minutes until golden on top.
  6. 5- serve warm with a scoop of vanilla ice cream.
