
This is my ultimate dough.
Ingredients
- 940 grams bread flour
- 60 grams wheat flour
- 18 grams powder milk
- 3/4 tablespoons salt
- 1/2 teaspoon sugar
- 1/4 cup olive oil
- 1 1/2 packet of approximately 3 1/2 teaspoons
- 24 ounce warm water
- 1- To perfectly make this dough every time, be sure to measure the ingredients using a scale
- 2- Below is how to make this recipe by hand but feel free to use a kitchen aid with the dough hook attachment instead and follow the same sequence of adding ingredients
- 3- In a spacious bowl, mix all the dry ingredients thoroughly
- 4- Add 18 ounces of the water gradually while working the dough with your hands to combine
- 5- Add the olive oil, work it into the dough, and then add the remaining 6 ounces of water
- 6- Keep working the dough until it comes together and you form a ball
Instructions
- 7- Take out the dough, oil the bottom and sides of the bowl and then place the dough back. This prevents it from sticking to the sides.
- 8- Cover the bowl with a plastic wrap and a towel and keep in a warm place to proof for ~2 hours or until doubled in size. I like to keep mine in the microwave or inside the oven to proof.
