Sweet, juicy strawberries tucked between layers of buttery, golden crumble — these strawberry crumble bars are everything you want in a summer dessert! The crust is tender and buttery with just the right amount of sweetness, while the fresh strawberry filling adds a delicious fruity tang.
They’re incredibly easy to make with simple ingredients, and you don’t even need a food processor! Enjoy them on their own or serve them warm with a scoop of vanilla ice cream for the ultimate summer treat.

Ingredients
For the crust and crumble:
- 1½ cups all-purpose flour
- ½ cup sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup cold unsalted butter, cubed
- 1 egg
- 1 tsp vanilla extract
For the strawberry filling:
- 3 cups strawberries, cut into pieces
- ¼ cup sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 375°F (190°C). Line an 8 × 8-inch baking dish with parchment paper.
- In a food processor, pulse the flour, sugar, baking powder, and salt. Add the cold butter, egg, and vanilla, then pulse until the mixture becomes crumbly. No food processor? Whisk the dry ingredients together, then work in the cold butter with a fork until crumbly. Add the egg and vanilla and mix until combined. You should still see small specks of butter throughout the mixture.
- Press about two-thirds of the crumble mixture firmly into the bottom of the prepared baking dish to form the crust.
- In a bowl, toss the strawberries with the sugar, cornstarch, and lemon juice until evenly coated.
- Spread the strawberry mixture over the crust, then sprinkle the remaining crumble evenly over the top.
- Bake for 35–40 minutes, until the edges are golden and the strawberry filling is bubbling. For a more golden top, briefly place under the broiler, watching closely to prevent burning.
- Let cool for at least 10 minutes before cutting into bars. For cleaner slices, allow them to cool further before serving.
SERVING TIP: Enjoy these strawberry crumble bars on their own or slightly warm with a scoop of vanilla ice cream. The combination of buttery crumble, sweet strawberries, and cold, creamy ice cream is simply irresistible.
