If you’re looking for a rice and chicken recipe, look no further. This is possibly the best dish you will ever make: Kabsah. And for good reason, the aroma, flavor, and color all come together to create this masterpiece, and it couldn’t be easier. Let me show you how.

Ingredients

  • 1 whole fryer chicken (2 1/2 – 3 lb.)
  • 3 cups long grain rice
  • 1 cup raw almond (blanched, skin removed and split in half)
  • 1 cup golden raisin (hydrated for 10 minutes)
  • 1/4 cup vegetable oil
  • 2 tbs. Olive oil
  • 1 tsp. Ghee

Whole Spices

  • 2 loumi (dried lemon)
  • 2 bay leaves
  • 8 whole cloves
  • 1 cinnamon stick

Ground spices

  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Black pepper
  • 1 tsp. 7 spices
  • 1 tsp. Chicken bouillon powder
  • 1/4 tsp. Turmeric
  • 1/2 tsp. Coriander
  • 1 tbs. Kabsah spice (optional)
  • 1 tbs. Tomato paste
  • 1 tsp. Salt

Vegetables

  • 1 large onion (diced)
  • 2 carrots (roughly shredded)
  • 2 tomatoes (diced)
  • 1 yellow pepper (diced)
  • 1 jalapeño (diced) optional
  • Zest from 1 orange
  • 1 tbs. Garlic (minced)
  • 1 tbs. Ginger (minced)
  • 6 cups water + 2 cups water

Brushing paste for the chicken

  • 1 tbs. Tomato paste
  • 2 tbs. Cooking broth
  • 1/2 tsp. Chicken bouillon powder
  • 1 tbs. Olive oil
  • Salt
