Atayef is a staple dessert during Ramadan that everyone enjoys. For years I used a recipe that included eggs, then I found this one, and I have to say, it’s the best recipe yet. It takes 35 minutes to prepare, the batter is easy to pour, and the result is fluffy Atayef (Middle Eastern pancakes) filled with cheese or walnuts, baked or fried, then dipped in simple syrup. Yummm, I use the same recipe for Atayef Asafeeri, mini Atayef filled with Ashta and enjoyed cold.

Ingredients

  • 1/2 cup farina
  • 2 cups flour
  • 1 tbs sugar
  • 1/2 tsp. Salt
  • 1/4 tsp yeast
  • 1/4 tsp powder vanilla
  • 2 1/2 cups warm tap water
  • 1/4 tsp baking soda + 1/4 cup room temperature water

Cheese Filling

  • Cheese (queso blanco) soaked in cold water until no longer salty
  • 2 tbs sugar

Walnut Filling

  • 1 cup walnut
  • 1 tbs. Sugar
  • 1/2 tsp. Cinnamon (ground)

Instructions

  1. In a bowl whisk the dry ingredients add water and whisk well before blending , using a hand mixer (no blender) blend for 2 minutes cover the bowl and let rest (no need for warm place) for 30 minutes.
  2. Uncover mix baking soda with extra water add to the batter and mix for 2 minutes, let rest for 5 minutes then you can start working with the batter.
  3. Using a non-stick skillet let it get really hot, start pouring your batter using either a pancake dispenser or a ladle. Turn the heat down to medium bubbles should form on top wait until they’re dry and remove from heat (don’t flip) place on a towel and cover so it doesn’t dry.
  4. Strain the cheese completely from water, break it down add sugar and mix.
  5. Process in a food processor by pulsing several times to get a coarse chop consistency.

  7. Pinch the Atayef from the edge to make a pocket (refer to reel) fill with cheese making sure not to over fill and pinch the rest of the pocket you will have half moons.
  8. Deep fry in hot oil until golden place in the simple syrup.
  9. Or bake in a 400 F. Preheated oven by brushing with lots of ghee all over. 8 minutes to bake then pop under the broiler.
