Ingredients
For the fruit filling
- 3 peaches, pitted and sliced
- 4 plums, pitted and sliced
- 1 cup fresh cherries, pitted and halved
- ¼ cup sugar
For the crisp topping
- 1 large egg
- 1 cup sugar
- ¼ tsp vanilla powder or 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ⅓ cup butter, melted
For the baking dish:
- 2 tbsp butter, for greasing
For serving:
- Vanilla ice cream
Instructions
- Preheat the oven. Preheat your oven to 350°F (175°C). Generously butter an 8 × 8-inch baking dish with 2 tablespoons of butter.
- Prepare the fruit. In a large bowl, combine the sliced peaches, plums, and cherries with ¼ cup sugar. Gently mix with your hands until the fruit is evenly coated. Transfer the fruit and all its juices to the prepared baking dish, spreading it into an even layer.
- Make the crisp topping. Using the same bowl, whisk together the egg, 1 cup sugar, cinnamon, and vanilla. Add the flour and baking powder, then work the mixture with your hands until it forms a crumbly texture.
- Add the topping. Evenly scatter the crumble mixture over the fruit, covering as much of the surface as possible.
- Drizzle with butter. Melt the butter in the microwave and spoon it evenly over the crumble topping.
- Bake. Bake for about 45 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.
- Serve and enjoy! Let the crisp rest for a few minutes, then serve warm with a scoop of vanilla ice cream. The combination of warm, juicy fruit and buttery crumble with melting ice cream is simply irresistible!
Tip: You can use slightly tart fruit for a lovely balance of flavors. If your peaches and plums are especially juicy, allow the crisp to rest for 10–15 minutes after baking so the filling can settle a little before serving.
A simple, rustic dessert that makes the most of summer’s beautiful fruit. Enjoy!
