Old-Fashioned Coconut Cake

A recipe does not need to be fussy to feel special, and Old-Fashioned Coconut Cake is a lovely reminder of that. It feels festive enough for company and just as welcome on an ordinary afternoon. It is especially handy for days when I want something straightforward without settling for dull.

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 tbs. Vanilla paste
  • 2 cups all purpose flour
  • 1 cup desiccated coconut + more for topping
  • 1 tbs. Baking powder

Simple syrup

  • 2 cups sugar
  • 1 1/2 cups water
  • Squeeze of lemon
  • 1 slice of lemon

Instructions

  1. Preheat oven to 350 F.
  2. Butter and flour 12×2 inches round cake pan.
  3. Prepare the simple syrup first, let the ingredients come to boil with out stirring then lower the heat to low and cook for 4:00 minutes.
  4. Beat 4 eggs, sugar, oil, and vanilla until almost light in color.
  5. Add the flour gradually while having the beater on stir.
  6. Add the coconut then 1 tablespoon of baking powder make sure to push the sides with a spatula.
  7. Pour the batter in the cake pan, this will be a thick and sticky batter.
  8. Smooth the top then give it a couple of taps!
  9. Bake for 20 minutes then turn the oven off let sit for another 5 minutes.
  10. Flip let cool and top with 1 to 1 1/2 cups of warm simple syrup.
