Kh’yarieh ~ White Squash in Yogurt Meat Sauce

My favorite recipes have a way of making people linger at the table, and Kh’yarieh ~ White Squash in Yogurt Meat Sauce encourages exactly that. I like to let a main dish take center stage and keep everything around it relaxed. Make it your own where the recipe allows, then pass the plate around generously.

Ingredients

  • 1 lb. 10 ounce about 750 grams medium white squash
  • 10-16 ounce coarse ground beef
  • 1 medium onion finely diced diced
  • 3 tbs Vegetable oil
  • 1/4 tsp cinnamon ground, 1/4 tsp 7 spice, salt
  • 4 cups full fat plain yogurt room temperature
  • 3 tbs cornstarch
  • 1 cup cold water + 1 cup warm water
  • Pine nuts + 1 tbs vegetable oil

Instructions

  1. Cut the squash into discs about 1/4 inch thick.
  2. In a large heavy duty pot heat 3 tablespoons of vegetable oil add 1 diced onion, a little bit of salt and sauté until tender add the beef and spices. Cook the beef until no longer pink making sure to break it apart while stirring, add the white squash give it a stir to incorporate the meat juices.
  3. Cover and cook on low for 20 minutes until it’s tender but holding its shape making sure to uncover an stir occasionally in between, uncover the last 5 minutes and turn the heat up to medium for the squash to get a golden color.
  4. In a separate pot add the yogurt + cornstarch + 1 cup cold water whisk until there’s no cornstarch lumps, now transfer to the stove top and cook on medium heat while stirring all the time ( very important other wise the yogurt will curdle ) in a circular motion clock wise until it forms bubbles on the edges that’s a sign that it’s done.
  5. Add the yogurt to the squash mixture while it’s on medium heat, add the warm cup of water to shake any leftover yogurt in the pot and stir into the squash mixture. Discard of any oil that surfaces on top.
  6. Fry pine nuts in a little bit of oil until almost golden and remove from heat as they will continue cooking, immediately add to the squash yogurt sauce and cook for 5 minutes on low and it’s ready.
  7. Serve next to vermicelli rice and enjoy 😊.

Notes

  • You can totally make this dish vegetarian just omit the meat.
