
It’s Super Bowl Sunday, chicken wings anyone? This recipe is all you need, so juicy and tasty and addicting, and also super easy to make.
Ingredients
- 2 lb. Chicken wings
- Salt and black pepper
- Avocado oil
Chimichurri sauce
- Measure with your heart (I’ll give you estimated measurements)
- 1 bunch Parsley, 1/2 bunch cilantro, 2 cloves garlic minced, zest of 1 lemon, juice of 1 lemon, 1 tbs mustard whole grain Dijon, 1 jalapeño minced, salt and lots of olive oil
Instructions
- Wash the chicken with lemon juice and salt, rinse with cold water and pat dry.
- Preheat oven to 350 F.
- Drizzle avocado oil on the chicken wings, add salt and black pepper mix well. Line a baking sheet fitted with a wire rack with parchment paper, spread the chicken wings making sure not to over crowd bake for 35 minutes on the bottom shelf making sure to turn mid way.
- In the meantime prepare the chimichurri sauce make your own you don’t have to follow exact measurements, reserve 3/4 of the sauce in a jar.
- Raise the temperature of the oven to 425 F.
- And finish baking the chicken on top shelf for another 20 minutes or until golden, I like to also pop it under the broiler to get an even golden color.
- Remove the chicken from the oven, add it to the rest of the sauce in the bowl. Give it a good swirl to make sure it’s coated well.
- Add to a serving platter top with extra sauce and jalapeño slices and enjoy.
