
They say when life gives you lemons, make lemonade, and I say when life gives you a sour pineapple, make jam 💛💛
Ingredients
- 2 lb fresh pineapple cored and cut in chunks
- 2 3/4 sugar
Instructions
- Place the pineapple in a heavy bottom pan ( I prefer stainless steel ) add the sugar, mix well and let it sit for 30 minutes, so it can release its own juices. You will notice that I have modified my recipe because I didn’t have the exact 2 lb, so I used 2 2/3 cups sugar. It’s very important not to skimp on using sugar in jams other wise it will not last and could spoil easily. Next place the pan on top of the stove, turn the heat on high until the mixture starts bubbling making sure to stir all the time because you don’t want the sugar to burn. Once it reaches the bubbling point turn the flame down to low, and let it cook slowly stirring occasionally for about 45 minutes ( you will notice it will continue on bubbling, don’t be alarmed that’s part of the process ). Now I let my pineapple caramelize for a little bit. If you don’t like that and would like the pineapple to stay golden start checking at 30 minutes. It’s very important to have a jam like consistency. Turn off the heat let stand for 5 minutes and then with an immersion blender blend the jam very quickly.
- ✨Notice: I added a 1/4 cup water to the jam after blending and cooked for an extra 2 minutes because I felt it was too thick, so if you cook it for less you can skip this step.
- Let the jam cool completely before adding to sterilized jars. Cover the jar tight and and flip upside down overnight.
- Keep the jam in cool dark place. Enjoy!
