German Plum Cake

As Memorial Day approaches, I wanted to share this super easy cake made with simple ingredients you probably already have in your pantry. It’s a moist coffee cake with a simple batter, a crunchy streusel topping, and fresh plums. So delicious! You just have to make it. With this batter, you can use any stone fruit your heart desires.

Ingredients

  • 1 1/2 lb. Plums pitted and sliced

Cake batter

  • 1 cup all purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 tsp lemon zest
  • 2 eggs room temperature

Streusel

  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1/4 tsp cinnamon ground
  • 1/2 cup unsalted butter (room temperature)

Instructions

  1. Preheat oven to 350 F, prepare your 9 inch springform pan by lining the bottom with wax paper and buttering the sides.
  2. Prepare the batter by beating all the ingredients until smooth.
  3. Spread the batter evenly and start arranging the plums in a circular pattern overlapping.
  4. Prepare the streusel by combining the ingredients and working them between your fingers until you get a crumbly topping.
  5. Sprinkle the streusel evenly on top of the plums.
  6. Bake for 50 minutes or until the top is lightly golden. Let cool for 10 minutes then run a knife around the edge and remove the outer ring.
  7. Let cool completely and enjoy ☺️.
