
As Middle Easterners, we take frying our vegetables seriously, and there’s no shame in eating a fried vegetable sandwich. I’m telling you, there’s nothing more satisfying or delicious, in my humble opinion! Paired with a cilantro garlic sauce, mmmmmmm, chef’s kiss 😚🤌🏼 Do you agree with me that the simple things in life, or around the kitchen, are the ones that bring pleasure to our hearts and our taste buds? I highly recommend trying this sandwich and savoring it until the last bite. We also eat the cilantro sauce on its own 😅 or next to kebab. For the vegetables, I chose globe eggplant, cauliflower, and white zucchini, you can also add potatoes if you like.

- Peel the eggplant and cut into desired size, sprinkle generously with salt let sit for 1 hour rinse thoroughly in cold water.
- Heat the oil to 375 F. Squeeze the moisture out of the eggplant before frying. Fry until golden and set on paper towel , as for the cauliflower just cut to desired size and fry after in the same oil, again set on paper towel to absorb all the excess oil sprinkle with lots of sumac, salt and a squeeze of lemon juice.
- Yogurt sauce: garlic, middle eastern yogurt, lemon juice, salt , 1/2 bunch cilantro and olive oil (let your taste be your guide).
- Make a sandwich on pita bread and enjoy !!
