Dough

If there is one thing I have learned in the kitchen, it is to keep recipes like Dough close at hand. There is a particular satisfaction in baking something you can tear, slice, and pass around while it is fresh. This recipe brings a little of the abundance of a Middle Eastern table into the kitchen. It is a recipe worth slowing down for, even if only long enough to enjoy the first bite.

Ingredients

Filling

  • 1 cup fenugreek
  • 3 cups water
  • 2 large onion, chopped
  • 1 cup extra virgin olive oil
  • 1 tsp salt
  • 2 tbs sumac
  • 1/2 tsp Aleppo pepper or chili flakes
  • 1 tbs paprika
  • 1/4 tsp cinnamon
  • 1/4 tsp black pepper
  • 3/4 tbs cumin
  • 3 tbs lemon juice

Dough

  • 940g bread flour
  • 60g wheat flour
  • 20g powdered milk
  • 18g yeast
  • 1 tsp sugar
  • 1/4 cup olive oil
  • 2 fl ounces, 3 1/4 cups lukewarm tap water + 4 ounce depending on the flour
  • 12g salt

Instructions

  1. Soak the fenugreek seeds a night before to plump and get rid of bitterness.
  2. Next day rinse the fenugreek in cold water thoroughly, place in a pot with 3 cups water bring to a boil then cook on medium heat until soft. Strain from the yellow liquid.
  3. In a large pot add the onions and cook for 30 seconds add the olive oil and salt and cook until tender, add the listed spices and stir with 2 onions until fragrant add the fenugreek and stir well add 3 tablespoons of lemon juice, adjust the salt if needed and cook on medium heat while stirring for a minute. Set aside to cool.
  4. In the meantime make the dough, stir in all the dry ingredients except for the salt add the water gradually while stirring with a spatula add the olive oil and work it in the dough with the spatula. kneed with your hands enough for the flour not be dry add the salt and continue kneading, at this point add the extra 4 ounce water and continue kneading until it forms a sticky ball, drizzle the bowl with olive oil place the the dough, cover and let proof in a warm place for 2-3 hours until it doubles in size.
  5. Once proofed gather the dough and cut into 6 equal portions.
