
Long ago I stopped saving good recipes only for company, so Cauliflower My Way is welcome at my table any day of the week. I like appetizers that feel generous and unfussy, with everyone helping themselves as they talk. There is something comforting about letting the oven take over while the table comes together.
Ingredients
- 2 small cauliflower heads cut into florets
- Oil for frying
- 4-6 garlic cloves sliced
- 1 jalapeno seeded and sliced thinly
- 2 tbs olive oil
- 1/4 tsp turmeric
- 1/2 tsp yellow mustard
- Juice from one lemon
- Salt and pepper to your taste
- Cilantro leaves
- Pomegranate seeds (optional)
Instructions
- Boil the cauliflower until almost tender and drain.
- Fry the cauliflower until golden and place on paper towel, you can also air-fry or oven bake, but fried is better.
- In a pan add the oil, garlic, jalapeno and cook on low to become fragrant 30 seconds, sprinkle 1/4 teaspoon of turmeric, mustard and black pepper stir well add the juice of one lemon then salt to taste.
- Add the cauliflower and toss gently top with cilantro and pomegranate.
