What’s better than a blondie? A caramel apple blondie, of course! 🤎 I’ve been dreaming about this combination, and let me tell you, it turned out even better than I imagined. This might just be one of the best things I’ve ever made!
These blondies are soft, buttery, and packed with sweet apple pieces, warm cinnamon, and pumpkin spice. But the real magic happens when you drizzle that rich, homemade caramel glaze over the top. The sweetness is just right, the apples add the perfect touch of freshness, and the caramel takes everything to another level.
Trust me, you need to run to your kitchen and make these! 🍏✨
Ingredients
For the blondies:
- ½ cup (1 stick) unsalted butter
- 1 cup brown sugar
- 1½ cups all-purpose flour
- 1 tsp ground cinnamon
- ½ tsp pumpkin spice
- 1 tsp baking powder
- A pinch of salt
- 2 eggs
- 1 apple, peeled, cored, and diced
For the caramel glaze:
- ½ cup (1 stick) unsalted butter
- ¾ cup brown sugar
- ½ cup heavy cream
- 3 tbsp powdered sugar
Instructions
- Preheat the oven to 325°F (165°C). Line a 9 × 9-inch baking pan with parchment paper.
- In a saucepan, melt the butter with the brown sugar, stirring until combined. Set aside to cool slightly.
- In a large bowl, mix the flour, cinnamon, pumpkin spice, baking powder, and salt.
- Add the eggs and the cooled butter mixture. Mix until combined, then fold in the diced apples. The batter will be thick.
- Spread the batter evenly into the prepared pan and smooth the top.
- Bake on the bottom rack for 20 minutes. Turn off the oven and leave the blondies inside for another 2 minutes.
- Remove from the oven and let cool before lifting them out of the pan. Transfer to a wire rack to cool completely.
CARAMEL GLAZE
- In a saucepan, combine the butter, brown sugar, and heavy cream. Stir continuously over medium heat until the mixture bubbles.
- Reduce the heat and simmer for 3 minutes, stirring frequently. Remove from the heat and whisk in the powdered sugar until smooth.
- Let the caramel cool slightly, then drizzle it generously over the blondies. Allow the glaze to set before slicing.
Cut into squares, grab a cup of coffee, and enjoy every delicious bite! 🍎🤎
