
I am convinced a well-loved recipe is one of the nicest things a cook can pass along; Berry Cake is worth sharing. This is a lovely way to finish a meal or make an afternoon cup of coffee feel like an occasion. There is something comforting about letting the oven take over while the table comes together.
Ingredients
- 2 cups flour all purpose
- 1 1/4 cup sugar
- Zest from 1 lemon
- 1/2 tsp sea salt
- 3 tsp baking powder
- 1/3 cup blue berries
- 1/3 cup black berries
- 2/3 cup strawberries, cut
- 2 eggs room,temperature
- 2 tsp vanilla extract
- 2/3 cup sour cream, room temperature
- 1/2 cup vegetable oil
Instructions
- Preheat the oven to 350F, 180C.
- Butter a 9 inch cake pan and place parchment paper on the bottom.
- In a large bowl whisk the dry ingredients flour, 1 1/4 cups of sugar, the zest of 1 lemon, BP, and salt, then add the berries and coat them with the flour so they don’t sink to the bottom.
- In a separate bowl whisk the wet ingredients eggs, 2/3 cup of sour cream, vanilla and oil add the mixture to the dry ingredients.
- Using a spatula stir well together. It will be a thick batter.
- Pour the batter in the cake pan and smooth the top. Add extra berries to the top.
- Bake for 40-45 minutes on the shelf second from the bottom. Test with a toothpick for doneness.
- Let cool in the pan for 10 minutes before taking out and cooling on a rack.
- Once cooled dust with powder sugar and enjoy.
