
I love spring and all the beautiful colors that come with it, and what better way to celebrate than with a delicious Asparagus Tart!
Ingredients
- 1 sheet frozen puff pastry thawed
- 1 lb fresh asparagus washed and trimmed
- 3 tbs Dijon mustard
- 1 1/2 cup Gruyère cheese
- Olive oil for brushing
- Salt + pepper
- Lemon zest
Instructions
- 1- Preheat oven to 400F. Lay out the puff pastry on a floured surface. Using a rolling pin, stretch out the dough carefully and mend any cracks. Place the pastry dough on a parchment lined baking sheet. Fold the edges in about 1/4 of an inch. Using a sharp knife lightly score inside the perimeter of the pastry dough and then poke the middle with a fork.
- 2- Bake the pastry for about 10-12 minutes or until golden. I would check around 10 minutes. Take out and let cool for another 10 minutes. Using your hand, gently press the middle down so it’s lower than the edges.
- 3- Spread 3 tablespoons of dijon mustard with a spoon then sprinkle the cheese, reserving 2 tablespoons.
- 4- Start lining 1 pound of asparagus on top of the cheese alternating ends and tops. Brush with olive oil and season with salt and black pepper. Sprinkle the rest of the cheese on top and bake at 400F for 20-30 minutes or until golden on top. Sprinkle lemon zest on top and, Enjoy!
