
Refreshing and green, this Fresh Za’atar Salad / سلطة زعتر أخضر is a staple in the Palestinian kitchen. When you see it in the market, you know spring is around the corner. I grow mine here in California, and the closest variety to the one from back home is Mexican or Italian oregano. It’s a simple salad, yet packed with flavor. If you find any fresh oregano, please give it a try. I promise you’ll fall in love 🌿🌿.

- Pick the leaves from the stems of the oregano. Wash a few times to ensure there is no dirt left. Squeeze the water out and place in a bowl. Chop red onion, I used a half of a medium onion.
- Add olive oil, salt, sumac, and lemon juice and some chopped lemon segments.
- It’s really all to your liking. Mix well and enjoy!
- I like to toast sourdough bread, spread some labaneh /Kiefer cheese on it and load the salad on. It’s so delicious.
