
These Vegetable Samosas ๐ are one of my favorites.
Ingredients
- ๐ 4- 5 medium size potatos cubed
- ๐ 2 medium size carrots cubed
- ๐ 1 medium red onion chopped
- ๐ 1 cup frozen peas rinsed
- ๐ 1 tbs garlic
- ๐ 1 tbs ginger
- ๐ 2-3 tbs vegetable oil
- ๐ 2 tbs low sodium soy sauce
- ๐ 1/3 – 1/2 cup water
- ๐ 1/2 tsp amchur powder (dried mango), optional
- ๐ black pepper and salt to taste
- ๐ 1-2 tbs garam masala
- ๐ 3 tbs chopped cilantro or mint
Instructions
- The count down has started and Ramadan is upon us. May Allah accept from all of us. The number one requested appetizer is the delicious samosa (aka sambosak in Arabic). Crunchy and full of flavor, itโs the perfect starter next to a cup of soup. I make a batch and freeze them so that I can easily enjoy them anytime I want. To all my friends who do not celebrate, this is still a great item to add to your table anytime!
- ๐ pack egg roll wrapper.
- 1- start by heating a large pan over medium heat, add the oil, 1 tablespoon of ginger, 1 tablespoon of garlic and sautรฉ until golden.
- 2- add the onions and continue sautรฉing on low heat until almost tender.
- 3- add the potatoes and 2 carrots, stir well, then add soy sauce and continue stirring until combined. Cover and let cook for the vegetables to sweat about 5 minutes.
- 4- add the black pepper and 1/2 teaspoon of amchur powder. Stir then add 1/3 – 1/2 cups of water and cover.
- 5- let cook for about 20 minutes on low heat, then uncover and taste for salt. Add the peas, cover again, and let cook for about 5 more minutes.
- 6- uncover the pan and make sure there is no liquid left. If thereโs any, turn the heat up until it evaporates. Turn the heat off and let cool slightly before adding 1-2 tablespoons of garam masala. Now your filling is ready.
- 7- let the filling cool completely before adding 3 tablespoons of cilantro or mint.
- 8- grab an egg roll wrapper and fold it in half. I use that as a guide to slice all the layers in half evenly.
- 9- add a tablespoon of filling to the corner of one wrapper and fold until you complete a triangle (refer to video for how-to).
- 10- make a slurry of water and flour to dab onto the edge of the wrapper land seal the ends.
- 11- fry in 2-3 tablespoons of vegetable oil over medium heat until golden and enjoy!
