Vegetable Samosa

These Vegetable Samosas ๐ŸŒ™ are one of my favorites.

Ingredients

  • ๐ŸŒ™ 4- 5 medium size potatos cubed
  • ๐ŸŒ™ 2 medium size carrots cubed
  • ๐ŸŒ™ 1 medium red onion chopped
  • ๐ŸŒ™ 1 cup frozen peas rinsed
  • ๐ŸŒ™ 1 tbs garlic
  • ๐ŸŒ™ 1 tbs ginger
  • ๐ŸŒ™ 2-3 tbs vegetable oil
  • ๐ŸŒ™ 2 tbs low sodium soy sauce
  • ๐ŸŒ™ 1/3 – 1/2 cup water
  • ๐ŸŒ™ 1/2 tsp amchur powder (dried mango), optional
  • ๐ŸŒ™ black pepper and salt to taste
  • ๐ŸŒ™ 1-2 tbs garam masala
  • ๐ŸŒ™ 3 tbs chopped cilantro or mint

Instructions

  1. The count down has started and Ramadan is upon us. May Allah accept from all of us. The number one requested appetizer is the delicious samosa (aka sambosak in Arabic). Crunchy and full of flavor, itโ€™s the perfect starter next to a cup of soup. I make a batch and freeze them so that I can easily enjoy them anytime I want. To all my friends who do not celebrate, this is still a great item to add to your table anytime!
  2. ๐ŸŒ™ pack egg roll wrapper.
  3. 1- start by heating a large pan over medium heat, add the oil, 1 tablespoon of ginger, 1 tablespoon of garlic and sautรฉ until golden.
  4. 2- add the onions and continue sautรฉing on low heat until almost tender.
  5. 3- add the potatoes and 2 carrots, stir well, then add soy sauce and continue stirring until combined. Cover and let cook for the vegetables to sweat about 5 minutes.
  6. 4- add the black pepper and 1/2 teaspoon of amchur powder. Stir then add 1/3 – 1/2 cups of water and cover.
  7. 5- let cook for about 20 minutes on low heat, then uncover and taste for salt. Add the peas, cover again, and let cook for about 5 more minutes.
  8. 6- uncover the pan and make sure there is no liquid left. If thereโ€™s any, turn the heat up until it evaporates. Turn the heat off and let cool slightly before adding 1-2 tablespoons of garam masala. Now your filling is ready.
  9. 7- let the filling cool completely before adding 3 tablespoons of cilantro or mint.
  10. 8- grab an egg roll wrapper and fold it in half. I use that as a guide to slice all the layers in half evenly.
  11. 9- add a tablespoon of filling to the corner of one wrapper and fold until you complete a triangle (refer to video for how-to).
  12. 10- make a slurry of water and flour to dab onto the edge of the wrapper land seal the ends.
  13. 11- fry in 2-3 tablespoons of vegetable oil over medium heat until golden and enjoy!
