Atayef ~ قطايف

Atayef ~ قطايف is a Middle Eastern dessert that’s a favorite in every household, probably even more than kanafeh. Made primarily during the month of Ramadan, it looks like a pancake, but it’s not. It can be stuffed with cheese, walnuts, or ashta (clotted cream) and then baked or fried to perfection. Finally, it’s dipped and coated in simple syrup, and my oh my, it just melts in your mouth. Ingredients

  • 1 cup fine semolina
  • 3 cups flour
  • 1 egg
  • 1 cup milk
  • 3 cups warm water
  • 1/8 tsp powder vanilla or 1 tsp regular vanilla
  • 1 tbs baking powder
  • 1 tsp yeast
  • 1/4 tsp baking soda
  • 1/8 tsp turmeric optional for color
  • Ghee for baking or vegetable oil for deep frying
  • Stuffing
  • Chopped walnuts + sugar + cinnamon
  • Panela cheese or akawi cheese + sugar
  • 1- get yourself a blender, crack the egg and add all the liquid with the vanilla and blend

Instructions

  1. 2- while the blender is running on low, add the farina gradually from the opening on top, the mixture should be really runny so far.
  2. 3- turn off the blender, open the jug and add 3 cups of flour gradually one cup at a time making sure to blend after words on medium speed every time. Now your mixture should start coming together, like a pancake batter.
  3. 4- I like to add all my leavenings towards the end, and trust me on this. you don’t want to overwork the batter, so while the blender is running on low add the remaining ingredients from the opening ( refer to reel).
  4. 5- pour the batter in a bowl and cover, let it rest for a 60-90 minutes in a closed place. I use the microwave!
  5. 6- heat a griddle or if you are starting out a non stick pan. Stir the batter and use a small ladle to ensure you get similar size, pour the batter on the griddle you will see the bubbles forming. Do not flip wait until it dries on top watching the heat so it doesn’t burn.
  6. 7- keep between two towels and get ready for stuffing ( refer to reel ).
