I love spring and all the beautiful colors that come with it, and what better way to celebrate the season than with a delicious asparagus tart? Made with flaky, golden puff pastry, tangy Dijon mustard, creamy Gruyère cheese, and fresh asparagus, this simple yet elegant tart is perfect for spring gatherings, brunch, or a light lunch. Finished with a little fresh lemon zest, every bite is full of fresh, bright flavors!
Ingredients
- 1 sheet frozen puff pastry, thawed
- 1 lb. fresh asparagus, washed and trimmed
- 3 tbsp. Dijon mustard
- 1½ cups Gruyère cheese, shredded
- Olive oil, for brushing
- Salt and black pepper, to taste
- Lemon zest, for garnish
Instructions
- Prepare the pastry: Preheat the oven to 400°F. On a lightly floured surface, gently roll out the puff pastry, smoothing out any cracks. Transfer to a parchment-lined baking sheet. Fold the edges inward about ¼ inch to create a border. Lightly score around the inside of the edges with a sharp knife, then prick the center with a fork.
- Pre-bake: Bake for 10–12 minutes, or until lightly golden. Check around the 10-minute mark. Remove from the oven and let cool for 10 minutes. Gently press down the center of the pastry with your hand or the back of a spoon, keeping the raised edges intact.
- Add the toppings: Spread the Dijon mustard evenly over the center of the pastry. Sprinkle the shredded Gruyère over the mustard, reserving about 2 tablespoons for the top.
- Arrange the asparagus: Line up the asparagus spears over the cheese, alternating the tips and ends for a beautiful presentation. Brush lightly with olive oil, season with salt and black pepper, and sprinkle the reserved cheese over the top.
- Bake: Return the tart to the oven and bake for 20–30 minutes, or until the asparagus is tender and the pastry is golden and crisp.
- Finish and serve: Sprinkle fresh lemon zest over the tart, slice, and enjoy warm!
A beautiful, easy spring recipe that looks impressive but comes together with just a handful of ingredients. Enjoy!
