Blueberry Bagel French Toast Casserole

If you don’t know what to make for Father’s Day… Here’s a breakfast, brunch, or dessert idea with a dollop of whipped cream. You’ll notice I’m using cardamom, which complements the blueberry beautifully. It’s a spice well used in Scandinavian desserts and the Middle East, but if you think you might not like it, you can always substitute cinnamon!

Ingredients

  • 🫐 2 cups whole milk room temperature
  • 🫐 6 eggs room temperature
  • 🫐 1/4 cup melted butter
  • 🫐 2 tsp vanilla extract
  • 🫐 1/4 cup raw sugar
  • 🫐 1/4 cup maple syrup
  • 🫐1/4 tsp grind cardamom, 1/4 tsp nutmeg
  • 🫐 1 cup frozen blueberries
  • 🫐 cooking spray for the baking dish

Instructions

  1. 🫐 extra raw sugar to sprinkle on top.
  2. 1- preheat oven to 350 F, spray the baking dish and set aside ~( I used a 2 liter deep dish ). Cut the bagels into bite sizes and place in the dish.
  3. 2- in a bowl mix the rest of the ingredients. The butter most likely will solidify once it hits the milk mixture, it doesn’t really matter because it will cook in the oven anyways. Beat the mixture real well.
  4. 3- add the mixture to the bagels making sure to distribute evenly, add the blueberries on top. With a spatula press down on the bagels so they can absorb all the liquid. Sprinkle with some raw sugar on top, let it sit for about 15 minutes.
  5. 4- bake for 30 minutes, turn off the oven and leave it for another 5 minutes. Take out and enjoy warm with extra berries and a drizzle of maple syrup.
