
Love is in the air, and I can’t think of anything tastier or easier than this take on Ina Garten’s pancake recipe. They come out so fluffy and incredibly pillowy, yum 😋. Make them for your loved ones, and if you’re single, give some love to yourself and celebrate being you 💌
Ingredients
- 1 cup ricotta (whole milk)
- 1 cup butter milk
- 3 large eggs
- 1/4 cup sugar
- 1 tbs lemon zest
- 1/4 cup lemon juice
- 1/2 tsp vanilla extract
- 1 1/4 cup flour
- 1/4 cup cornstarch
- 1 tbs baking powder
- 1 1/2 tsp salt
- Clarified butter
- Maple syrup
- Mixed berries
Instructions
- In a bowl mix the dry ingredients (1 1/4 cups of flour, 1/4 cup of cornstarch, 1 tablespoon of baking powder and salt.
- In a separate bowl whisk the wet ingredients with 1/4 cup of sugar. Incorporate the wet ingredients into the dry, whisk well and let rest for 10 minutes (or you can make it a day ahead and save it in the fridge).
- In the meantime make clarified by melting a stick of butter on low so the fat can separate from the milk solids.
- Grab your favorite griddle, I like to use a paper towel to grease my griddle this way I don’t over coat it!!
- I decided to make a heart shaped pancake you can use any heart shaped tool. I have to warn you it wasn’t easy that’s why I only made two, the first one was a flop 😅.
- Serve warm with maple syrup and your choice of berries. Enjoy ♥️.
