
This is a forgiving recipe that I came up with out of necessity. I had extra boiled chicken (you can also use rotisserie), and since I love ranch and had ranch powder on hand, I used some. I wanted to keep it white and creamy, so I opted for white cheeses with the addition of green olives and caramelized onions. It was a match made in heaven, and the result was outstanding. You can absolutely make this recipe your own, but try it first the way I made it. 😋😉
Ingredients
- 1 pack brioche mini buns 12 count
- 2 cooked chicken breast shredded
- 1 onion diced fine
- 1 cup chopped green olives
- 2 tbs. Olive oil
- 2 tbs ranch powder
- 1/4 tsp. Black pepper
- 3-4 tbs heavy cream
- 1 cup Jack cheese shredded
- Shredded Mozzarella cheese
Instructions
- Sauté 1 onion with 2 tablespoons of olive oil on low heat until caramelized, add the chicken, 1 cup of olives, 2 tablespoons of ranch powder, 1/4 teaspoon of black pepper, 3-4 tablespoons of heavy cream and stir add Jack cheese and stir until it melts. If you feel the mixture is dry add a little bit more cream.
- Preheat oven to 350 F.
- Cut the brioche buns down the middle, place in a 9×13 baking dish spread the chicken mixture evenly, top with lots of mozzarella cheese and place the other half of the buns on top.
- Brush with a mix of butter, garlic and parsley.
- Cover with aluminum foil and bake on the middle rack until the cheese melt. Enjoy.
