
I love okra, and I feel like people don’t appreciate this vegetable because they simply don’t know how to cook it. But I’m telling you, if you try it my way! I think I might be able to change your mind, and don’t worry, it doesn’t stay slimy. I also love a good one-dish bake, it makes life so much easier. You can make this vegetarian too, and it’s so delicious.
Ingredients
- 3 lb. ~ 1250 grams Okra washed, trimmed and cut into 1/2 inch pieces
- 1 lb. ~ 500 grams Lamb or beef cubed (small)
- 2 medium onion diced
- 5 Roma tomatoes diced
- 1/3 cup Extra virgin olive oil
- Salt to taste
- 1/4 tsp. black pepper
- 1 tsp. 7 Spice
- 1/4 tsp. Cinnamon (ground)
- 1 diced jalapeño (optional)
Instructions
- Preheat oven to 400 F.
- In a baking dish combine onion, meat, salt, spices and olive oil. Stir well so all the pieces of meat get coated with olive oil and spices, spread out and place in the oven for 5-10 minutes until the meat browns a bit and the onion is soft (make sure to stir in between).
- Take the baking dish out of the oven add the okra, tomatoes a little bit of salt and give it a good stir and 2/3 cup of water.
- Reduce the heat in the oven to 375 F. Place the okra back in the oven and let it cook on bottom shelf for 45 minutes or until the okra has browned and the meat is tender.
- (If you notice the juices in the pan starting to dry up half way through you can add a little bit more water).
- We like to eat okra with pita bread, radishes, pickles, olives and a squeeze of lemon. Enjoy.
