
I have a weakness for food that looks inviting and tastes even better, which is why this fava yogurt bean dip caught my attention. This is a satisfying dish to keep in mind whenever dinner deserves a little more attention. Keep this one close for the days when time is short but a good meal still matters.
Ingredients
- Fava beans
- 2 Cloves garlic
- Yogurt
- Lemon juice
- Water
- Cilantro
- Olive oil
Instructions
- Start by seeding the fava beans by removing the pods from the casing.
- Boil for 15-20 minutes until tender then immediately drain and immerse in ice cold water to stop the cooking process.
- Peel the beans and set aside.
- Prepare the sauce which will consist of 1-2 cloves garlic smashed, tahini and yogurt ratio 1:3, lemon juice and some water, salt to taste.
- You can make the sauce as thin or as thick as you prefer, I prefer medium. Add chopped cilantro and stir well.
- Add the sauce to the fava beans drizzle with lots of olive oil and enjoy with pita bread or the bread of your choice.
