
The simplicity and flavors of this dish, which comes together with just a few simple ingredients, is what makes it a favorite all year round in my household. Comfort food at its best, in my opinion. Many countries and cultures use tomatoes on a daily basis in so many different ways, so let me introduce you to the Palestinian way, with a twist 😉

- Traditionally we fry tomatoes with a generous amount of olive oil (sometimes with skin on, sometimes without) with lots of garlic and hot pepper served with thick pita bread so it can absorb all the juices next to fried jibneh, zait w za’atar, boiled eggs and labneh but in this case I decided to serve it on top of za’atar crostini (restaurant worthy) tomorrow’s reel.
