
Or, as I call it, Hummus el Omara in my household (plural for Amir’s), because this dish is truly worthy of princes and princesses. What’s more satisfying than hummus topped with fried meat and pine nuts, drenched in olive oil, and enjoyed with warm pita bread? It’s mouthwatering 😋 Another breakfast item from the Middle East that you’re probably not familiar with 😊🤍
Ingredients
- 2 cups cooked garbanzo beans
- 1/4 cup tahini
- 1/2 tsp citric acid
- 1/2 tsp salt
- 1 ice cube
- 1/3 cup hummus water
- 1 tsp. Olive oil
Meat topping
- 200 grams lamb or beef (of your choice) cut into bite size
- Spices: 7 spices, ground cinnamon, black pepper and salt

- Tips for making a successful hummus
- I have used home cooked garbanzo beans, if you’re using canned just measure exactly
- hummus should always be warm not hot
- using a blender not the food processor is the best way to get smooth and creamy hummus
Instructions
- Any middle eastern will tell you we never measure when we’re making hummus. I measured for you so you can have an idea!! Feel free to adjust and taste along the way, you can also use lemon juice as part of the liquid.
- Always add your liquid gradually.
- Finally add the teaspoon of olive oil towards the end.
- For the meat.
- Add the spices by sprinkling to your liking except for the salt. Stir cover and let cook on low until tender, the meat will cook in its own juices if you feel the meat is still tough add a little bit of water!! Once tender add salt and olive oil to fry the meat just enough to give color.
- Plate the hummus top with the fried meat, save some of the oil to fry pine nuts sprinkle with paprika and enjoy.
