Ingredients
- 1 whole fryer chicken (2 1/2 – 3 lb.)
- 3 cups long grain rice
- 1 cup raw almond (blanched, skin removed and split in half)
- 1 cup golden raisin (hydrated for 10 minutes)
- 1/4 cup vegetable oil
- 2 tbs. Olive oil
- 1 tsp. Ghee
Whole Spices
- 2 loumi (dried lemon)
- 2 bay leaves
- 8 whole cloves
- 1 cinnamon stick
Ground spices
- 1/2 tsp. Cinnamon
- 1/4 tsp. Black pepper
- 1 tsp. 7 spices
- 1 tsp. Chicken bouillon powder
- 1/4 tsp. Turmeric
- 1/2 tsp. Coriander
- 1 tbs. Kabsah spice (optional)
- 1 tbs. Tomato paste
- 1 tsp. Salt
Vegetables
- 1 large onion (diced)
- 2 carrots (roughly shredded)
- 2 tomatoes (diced)
- 1 yellow pepper (diced)
- 1 jalapeño (diced) optional
- Zest from 1 orange
- 1 tbs. Garlic (minced)
- 1 tbs. Ginger (minced)
- 6 cups water + 2 cups water
Brushing paste for the chicken
- 1 tbs. Tomato paste
- 2 tbs. Cooking broth
- 1/2 tsp. Chicken bouillon powder
- 1 tbs. Olive oil
