Mushroom Soba Noodles

If you had to make one of my recipes, I would say make this one. She’s beautiful and tasty. After my daughter got married and moved out to her own place, she left me with a bunch of soba noodles that I didn’t know what to make with! So I came up with this recipe out of my love for mushrooms and Asian flavors. Now, I don’t know if this recipe is Asian enough, but I promise you it’s so delicious. I’ve made this recipe countless times, and every time it gets raving reviews. I hope you get to make it.

Ingredients

  • Japanese soba noodles
  • King oyster mushrooms (6 ounce)
  • Brown beach mushrooms (3.5) ounce
  • White button mushrooms (4 ounce)
  • 1 tbs. Avocado oil
  • Green onion
  • Black sesame seeds

Sauce

  • 1/4 cup Japanese barbecue sauce
  • 1 tbs. Soy sauce
  • 1/2 tbs. Sesame oil
  • 2 tbs. Rice vinegar
  • 1/2 tbs. Fish sauce
  • 1 tbs. Chili oil

Instructions

  1. Start by preparing the sauce. Whisk all the ingredients together and set aside.
  2. Boil the noodles according to package. Drain, rinse with cold water and set aside.
  3. For the king mushrooms use a fork to shred the stalk, then cut the cap and slice into smallest pieces.
  4. For the beach mushrooms cut off the base and they fall easily.
  5. To a pan add 1 tablespoon of avocado oil let it heat, add the mushrooms and sauté until they release some water, add the sauce and stir to coat then add the noodles and fold gently until coated with the sauce, and it’s ready.
  6. Garnish with green onions and black sesame seeds. Enjoy!
