
Cooking has taught me that a memorable table begins with a recipe worth sharing, especially one like Citrus Crush. There is always room in my kitchen for a drink that feels a little more special than the everyday. This one suits the easy rhythm of summer cooking beautifully.
Ingredients
- 1500 g lemon
- 1200 g orange
- 2 1/2 cups sugar
- Carbonated water
- Orange slices
- Fresh mint
Instructions
- The rule is for every 1 kilo citrus:1 cup sugar , so you can make it any way you wish what I used was perfect and made plenty.
- Start by peeling the citrus thinly with a peeler making sure not to get any of the white layer (I used 1/2 of the peel) sprinkle with 1/2 cup sugar and set aside while working on the other step.
- Remove the white part completely from the oranges and lemon and slice into disks, make sure to remove all the seeds, place in a bowl add 2 cups of sugar, using a hand blender blend until smooth.
- Add the sugared peel to a food processor and process until fine, add the peel to the orange lemon blend and blend together.
- In a clean bowl place a strainer with a cheese cloth pour the blend and squeeze out through the cheese cloth to get the purest citrus concentrate.
- You can either use a tray or silicon mold to pour and freeze over night.
- Enjoy with ice, a slice of orange or lemon and a spring of mint.
