Butter and Radish Terrine

A recipe does not need to be fussy to feel special, and Butter and Radish Terrine is a lovely reminder of that. This is exactly the sort of small bite that disappears quickly when friends gather around. This is exactly the sort of recipe that keeps a kitchen feeling alive and well used.

Ingredients

  • 5-8 radishes, depending on the size of radishes (thinly sliced)
  • 8 ounces unsalted butter
  • 4 tbs. Olive oil
  • Lots of fresh chives
  • Parsley leaves
  • Flaky salt to taste
  • Honey
  • Fried baguette slices

Instructions

  1. Slice the radishes thinly, I recommend using a mandolin. Pat dry between 2 towels to get rid of moisture.
  2. Melt the butter in the microwave until almost soft, whisk with 4 tablespoons of olive oil.
  3. Start assembling in your small loaf pan (I made 8 layers) add butter enough to cover the bottom then lay the sliced radishes top with the chives and parsley some flaky salt.
  4. REPEAT.
  5. Cover and let set in the fridge for at least 3 hours. Serve with baguettes and honey.
  6. I recommend dipping your knife in hot water and wipe for every slice to get clean slices also you want to serve this immediately out of the fridge.
  7. Also leave the the root on the radish when using the mandolin! that would be your guide so you don’t cut your fingers.
