
Some days call for a recipe with a little spirit, and Egg Salad Bites rises to the occasion beautifully. I like my salads abundant, colorful, and interesting from the first bite to the last. It is a recipe worth slowing down for, even if only long enough to enjoy the first bite.
Ingredients
- 8 eggs hard boiled
- 1/2 cup + 1 tbs Mayonnaise
- 1 1/2 tsp yellow mustard
- 3-4 baby dill pickles, chopped fine
- Chives
- Fresh dill
- Paprika
- Salt and pepper to taste
Instructions
- Slice bread cut into rounds.
- Tomato.
- Bring eggs to boil then turn off the heat and cover for 12 minutes.
- Separate the white from the yolk.
- Mash the yolk then add mayo, mustard, salt and pepper and mash together until smooth.
- Grate the white on a cheese grater, fold in the yolk with chives, pickles and dill.
- Fry the slice bread rounds until golden and drain on a paper towel.
- Top with a scoop of egg salad and garnish with tomato.
