Oven Baked Beef Ribs

After years of cooking for people I love, I know a keeper when I see one; Oven Baked Beef Ribs belongs in that category. I love a main course with enough character to carry the whole meal. There is something comforting about letting the oven take over while the table comes together.

Ingredients

  • 1 rack of beef ribs about 5-6 lb

Dry rub

  • 1 tbs cumin, ground
  • 1 tbs paprika
  • 1 tbs smoked paprika or chili powder
  • 1 tsp cayenne powder
  • 2 tbs garlic powder
  • 1 tsp black pepper
  • 1/4 cup brown sugar
  • 2 tbs sea salt

Homemade Barbecue Sauce

  • 1 1/2 cup ketchup
  • 1/2 cup mix of pomegranate and grape molasses
  • 1 tbs yellow mustard
  • 2 tbs apple cider vinegar
  • Black pepper
  • Cayenne pepper
  • Salt to taste

Instructions

  1. Clean the beef rack from any extra skin and pat dry, remove the silver skin behind the ribs by pulling at it.
  2. Preheat oven to 275F. Bake.
  3. In a bowl mix the spices for the dry rub.
  4. Prepare your baking pan with aluminum foil.
  5. Place the ribs on parchment paper and cover with the dry rub on both sides by packing and pressing. Place the ribs on the aluminum foil, now cover with another parchment paper and foil making sure to seal completely.
  6. Place in the oven and set the timer for 4 hours.
  7. After the 2 hour mark raise the temperature to 300F and turn the ribs upside down. Be careful as it will be hot and let cook for another 2 hours.
  8. Meanwhile prepare the barbecue sauce by mixing all the ingredients listed and cooking for 30 seconds or until bubbling (you can substitute with store bought barbecue sauce).
  9. Uncover the beef ribs, pour the barbecue sauce (enough to cover) raise the temperature of the oven to 350 F and bake uncovered for another 20-30 minutes.
  10. Serve next to mashed potatoes and vegetables.
