
Getting back to my roots with this fatteh. I’m Palestinian and proud of my homeland’s dishes. This is one of my favorite things to make on weekends or for dinner. Pita bread with hummus, meat, nuts, and lots of olive oil in one bite, so creamy and delicious, oozing with flavor. Yum 😋, can you tell how passionate I am about my fatteh? I hope you get to try it and enjoy.
Ingredients
- 2-2 1/2 cups homemade garbanzo beans aka hummus (substitute 2 cans garbanzo beans)
- 3 cups water
- Tahini (less than a 1/4 cup)
- 1/2 tsp salt, 1/2 tsp citric acid (to start with)
- 2-3 tbs Greek yogurt
- 3 medium size pita bread cut into squares + 1 tbs olive oil
- 8 ounce coarse ground beef
- Salt and pepper to taste
- Pine nuts (about 1/3 cup) you can use slivered almonds if you like
- Lots of olive oil
- Parsley and ground chili pepper for garnish
Instructions
- Step 1: heat the oven to 400 F, add the cut up pita bread + olive oil mix well and spread on a baking sheet and bake until golden about 5-7 minutes making sure to turn the pita half way through the baking.
- Step 2: start by heating the garbanzo beans (if you are using the canned kind make sure to cook it until it smashes between your fingers, you can always add more water if the water evaporates).
- Step 3: in a pan cook the meat add salt and pepper (measure with your heart) break it down while cooking cover and cook slowly until the juices disappear. Uncover add a lot of olive oil and fry the meat slightly until it browns.
- Step 4: make the hummus spread ( reserve 1/2 cup of garbanzo beans and 1/2 cup of hummus water). To a blender add hummus, tahini, 1/2 the liquid, salt and citric acid start blending gradually making sure to stop and stir in between add more liquid as you go, add the yogurt adjust the seasoning and blend away (what you are looking for is a thinner consistency than your normal hummus spread).
- Step 5: time to assemble, REFER TO REEL grab an 8×8 dish or any deep dish you have ( I used an oval dish).
