
Nothing pleases me more than finding a fresh reason to gather everyone around the table, and The Viral Smashed Falafel Sandwich provides one. I would set this in the middle of the table and let everyone help themselves. Once it is in the oven, the kitchen begins to do that wonderful work of building anticipation.
Ingredients
Falafel mixture
- 1 cup garbanzo beans soaked overnight
- 3 cloves garlic
- 1/2 bunch parsley
- 1/2 small onion
- 1 tsp. Coriander ground
- 1 tsp. Cumin ground
- 1 tsp. Anise ground
- 1 tsp. Salt
- 1/4 tsp. Baking soda
Instructions
- Soak the garbanzo beans in cold water for at least 12 hours.
- Using a grinder or a food processor grind the garbanzo beans, 1/2 bunch of parsley, 1/2 of an onion and 3 cloves of garlic alternating using the small hole attachment.
- Add the spices to the mixture mix well by hand then run it one more time through the grinder. Let rest for at least 30 minutes or overnight covered in the fridge.
- Grab 1 thin pita bread and split in half, spread a thin layer of the falafel mixture and press down with a spoon.
- Drizzle neutral oil in the pan and on top of the falafel.
- Heat the pan and flip the pita immediately (you get one go at it) don’t try to move other wis it will stick. Keep pressing down with a spatula while it’s cooking, left the edge carefully to see if turned golden, flip again to let the bread toast.
- Fill with your desired condiments and enjoy.
- I used cucumber, pickled turnips, fresh mint, shata and tahini sauce.
