Szechuan Chicken with Cashews

Probably the most requested recipe in my household, and for good reason. It’s super healthy, full of flavor, delicious, colorful, easy to make on a busy night, and the leftovers are sure to be eaten ☺️. I hope you get to try it and enjoy it as much as we do.

Ingredients

Chicken marinade

  • 4 boneless skinless chicken cut into cubes
  • 1 tsp cornstarch
  • 1 inch finely grated ginger root
  • 1 tbs soy sauce
  • Dash of ground white pepper

Vegetables

  • 2 large bell pepper (any color you like) cut in 1/2 inch square
  • 1 large carrot cut diagonally
  • 6 green onions cut in 1 inch (reserve white part)
  • 6 ounce brown or white mushrooms sliced
  • ( substitute with sliced canned mushrooms)

Cooking condiments

  • 2tbs vegetable oil + 1tbs
  • 1 tbs hoisin sauce
  • 2 tsp chili paste (substitute with sriracha)
  • 1/2 cup water
  • 1/2 cup cashews roasted unsalted

Thickening sauce

  • 1tbs cornstarch +1tbs soy sauce + 1tbs water

Instructions

  1. After prepping the chicken, in a large bowl mix cornstarch, 1 tablespoon of soy sauce and fresh ginger. Mix well add the chicken to the marinade, add white pepper and stir well to cover all the chicken pieces with the sauce. Cover and let marinate for 20 minutes in the fridge.
  2. In the meantime cut the vegetables and have them ready.
  3. Prepare the thickening sauce equal parts (cornstarch, soy sauce and water).
  4. In a large nonstick pan heat 2 tbs olive oil on high add the chicken and cook stirring constantly until no longer pink, transfer to a plate.
  5. Add 1 tbs vegetable oil in the pan and let heat, add the vegetables except for the reserved white tops and stir fry for 1 minute, add 1 tablespoon of hoisin sauce and 2 teaspoons of chili paste (I had non so I used sriracha) stir quickly and add back the chicken and water and let cook for 2 minutes, adjust the salt if needed.
  6. Add the thickening sauce (make sure to stir before adding as the cornstarch might clump).
  7. Stir very quickly, the stir fry sauce will thicken immediately.
  8. Top with the cashews and the reserved white parts. Serve next to white rice and enjoy.
