
I am always happiest when a recipe feels generous and approachable, which is exactly what draws me to Sweet Spiced Wheat with Nuts. This is the sort of sweet I enjoy with coffee, good conversation, and no particular rush. I hope you enjoy both the making and the sharing of it.
Ingredients
- 1 cup peeled wheat
- 4 cups water + 1 cup
- 1 tablespoon anise, ground
- 1 tablespoon fennel, ground
- 1/2 tablespoon cinnamon, ground
- 1 cup sugar or to your liking
- 2 tbs orange blossom water or to your liking
- 2 tbs rose water or to your liking
- For the toppings blanched almonds, plumped golden raisins, descanted coconut and candied fennel
Instructions
- Check the wheat for any stones then soak in cold water for 12 hours, rinse the wheat with cold water then place in a pot and cover with 4 cups of water, bring to a boil and skim the white froth. Let cook on low for 45-60 minutes (depending on the amount) until it’s soft.
- Check the water level you can add one cup of hot water at a time, once cooked it needs to have enough liquid on it because wheat will absorb the liquid once cooled.
- Add the spices and sugar and cook for 5 minutes to develop flavor add rose water and orange blossom water last.
- You can serve in one dish or individual cups top with the toppings and enjoy warm or cold. I personally prefer it warm.
