
When I am deciding whether a recipe is worth keeping, I ask if I would gladly serve it again; with Seed and Cut the Pumpkin into Desired Pie, the answer is yes. A jar made in your own kitchen always tastes more personal than anything bought from a shelf. Tuck the jar into the refrigerator and enjoy the pleasure of having it ready when you need it.
Ingredients
- 5 pound/ 1 kilo pumpkin peeled and cut
- 2 litre water
- 100 g pickling lime
- 2 liters water
- 1 kilo sugar
- 1/2 tsp citric acid
- 3 star anise, 1 cinnamon stick, 5-7 cardamom pods
Instructions
- Peel, seed and cut the pumpkin into desired pieces and measure 1 kilo or 2.5 lb. I used half of my pumpkin.
- Dissolve 100 g of pickling lime into 2 liters of cold water let it set (it will separate use only the water best you can) before straining into the pumpkin, make sure your pumpkin is covered in the solution.
- Cover the bowl and let sit on the counter overnight, stirring in the beginning every hour to insure the pumpkin gets in the solution.
- Second day: you will notice the pumpkin hardened, wash 8 times (wear gloves)to make sure non of the solution left any residue. Soak for 1 hour in fresh water inside the fridge, rinse again and soak one more time for 1 hour. *place on a towel to get rid of any extra water, now your pumpkin is ready to be cooked.
- In a large pot bring the 2 liters water and 1 kilo sugar to boil, skim any white foam add the pumpkin and bring to boil, lower the heat to low so there’s a gentle boil.
- Leave the pumpkin to cook for 120 minutes, stirring every 30 minutes.
- Test for doneness with a fork and tasting it should be firm but cooked all the way through.
- Add 1/2 teaspoon of citric acid give it a good stir, add the cardamom, star anise and cinnamon stick and let cook for 20 minutes on low.
- Let cool completely before storing into jars.
Notes
- Once you open the jar keep in the fridge for best results.
