Salmon Pineapple Tartar

Ingredients

  • 14 ounce salmon, small cubed
  • 1/4 fresh pineapple, small cubed
  • 1 avocado, small cubed
  • 2 green onions, thinly sliced only green part
  • Juice from 1/2 lime
  • 2 tbs avocado oil
  • 1 clove garlic, minced
  • 1/2 inch fresh ginger minced
  • Salt and black pepper to taste
  • Juice from 1 lemon
  • Lime zest
  • 1 green onion sliced into thin strips
  • Black sesame seed
  • Freshly fried tortillas

Instructions

  1. Cure the salmon with equal amounts salt and sugar for 30 minutes inside the fridge it helps draw out the moisture and kill any bacteria. After rinse thoroughly with cold water and pat dry.
  2. Cube the salmon then add 2 tablespoons of avocado oil, 1 clove of garlic, a 1/2-inch piece of ginger, the juice of 1 lemon, salt and black pepper, and lime zest. Stir well and let marinate for 10 minutes.
  3. Mix the avocado with the sliced green onion and the juice of 1/2 lime.
  4. To curl the green onion place the thinly sliced onion in ice water.
  5. To assemble grab a ring spoon the pineapple at the bottom then spoon the avocado, sprinkle some black sesame seeds and spoon the salmon on top.
  6. Garnish with curled green onion and pineapple. Serve with freshly fried tortilla chips.
