Roasted Minted Beet Salad with Honey Citrus Dressing

Happy Monday, everyone 🍊🍋🍯 We’re all trying to watch our health, and this salad checks all the boxes. So beautiful and appetizing, yet healthy and so delicious. Feel free to add protein to make it a full meal.

Ingredients

  • 3 roasted beets ( I only used 1 1/2, I like to keep roasted beets on hand )
  • I green apple
  • 2 blood orange sliced
  • Pomegranate seeds optional
  • Romaine lettuce
  • Fresh mint leaves roughly chopped
  • Candied pecans or walnuts

Dressing

  • 2 tbsp Dijon mustard
  • 1/2 tsp whole grain old style mustard
  • 1 tablespoon pomegranate molasses
  • Juice of 1/2 Cara cara orange or blood orange
  • Juice of 1/2 Lemon
  • 1 1/2 tablespoon Honey you can substitute with maple syrup
  • Salt and pepper to taste
  • 1/4 cup Olive oil

Instructions

  1. 1- line a baking sheet with foil. Arrange the beets, cover with foil tightly and roast in the oven at 400 F for 50 minutes ( make sure you wash really well from dirt and trim the ends ).
  2. 3- For the salad dressing Whisk all your ingredients together except for the olive oil.
  3. 2- whisk slowly as you incorporate the olive oil in a continuous stream.
  4. 3- arrange your salad in a bowl or a plate, add your dressing and enjoy!

Notes

  • I normally use cara cara orange but if you can find blood orange. IT WOULD BE A WOW, never mind the flavor which by the way I’m very partial to, but the COLOR Ah.
