Roasted Marinated Pepper Sandwich

Good food should feel warm, generous, and worth passing around, and that is the spirit behind Roasted Marinated Pepper Sandwich. I would set this in the middle of the table and let everyone help themselves. This is exactly the sort of recipe that keeps a kitchen feeling alive and well used.

Ingredients

  • 6 sweet peppers any kind any shape
  • 2 cloves garlic, minced
  • 6-8 hazelnuts, chopped or (walnuts, pecans, blanched almonds)
  • 1 tbs dried Mexican oregano, crushed
  • 1 tbs dried parsley
  • 1 tbs capers (optional)
  • Pomegranate molasses or balsamic glaze to taste
  • Salt and black pepper to taste
  • Olive oil enough to cover

Instructions

  1. Roast the pepper under the broiler until charred on all sides.
  2. Cover to sweat then peel and seed.
  3. Cut to desired size, I like to rip by hand.
  4. Make the marinade then drizzle over the peppers stirring gently. Let stand for 10 minutes then enjoy.
  5. Marinated peppers are great on their own but even better on top of burrata.
  6. Save any extra in a sealed container in the fridge.
