
Good food should feel warm, generous, and worth passing around, and that is the spirit behind Roasted Marinated Pepper Sandwich. I would set this in the middle of the table and let everyone help themselves. This is exactly the sort of recipe that keeps a kitchen feeling alive and well used.
Ingredients
- 6 sweet peppers any kind any shape
- 2 cloves garlic, minced
- 6-8 hazelnuts, chopped or (walnuts, pecans, blanched almonds)
- 1 tbs dried Mexican oregano, crushed
- 1 tbs dried parsley
- 1 tbs capers (optional)
- Pomegranate molasses or balsamic glaze to taste
- Salt and black pepper to taste
- Olive oil enough to cover
Instructions
- Roast the pepper under the broiler until charred on all sides.
- Cover to sweat then peel and seed.
- Cut to desired size, I like to rip by hand.
- Make the marinade then drizzle over the peppers stirring gently. Let stand for 10 minutes then enjoy.
- Marinated peppers are great on their own but even better on top of burrata.
- Save any extra in a sealed container in the fridge.
