
Every cook needs a few recipes that make the table feel cared for, and Potato Pie with Chicken and Chanterelle Mushrooms is a delicious place to begin. This is the kind of centerpiece that makes dinner feel complete without needing a crowded menu. There is something comforting about letting the oven take over while the table comes together.
Ingredients
- 600 g. Potatoes, golden
- 200 g. Chicken, cubed
- 1 small shallot, finely diced
- 2 tbs. Butter
- Dried rosemary
- 150g. Chanterelle mushrooms or brown
- 50 g. Mozzarella cheese or any cheese you prefer
- 3 eggs
- 200 ml. Heavy cream
- 1 tbs. Paprika
- 1/4 tsp. Garlic
- Salt and pepper to taste
- Fresh Dill
Instructions
- Boil the potatoes until soft but still firm, oil a baking dish and smash the potatoes with the back of a cup making sure to have an edge to make a shell, sprinkle with salt and plenty with a fork.
- Bake in a 350F. Oven for 15-20 minutes until almost golden.
- Melt 2 tablespoons of butter add the shallots and cook until tender add the chicken, salt and pepper and sprinkle with dried rosemary. Cook through! Set aside.
- Mix 3 eggs, cream and seasonings.
- Time to assemble: add the chicken mixture to the potato shell, spread the mushroom in between top with the cheese. Add the egg cream mixture spreading evenly top with fresh dill.
- Bake for 30 minutes or until golden brown.
- Let cool for 15 minutes. Enjoy next to a salad.
