Pineapple Chicken Stir Fry

Tender, golden chicken thighs tossed in a savory-sweet pineapple sauce with caramelized pineapple, colorful bell peppers, fresh ginger, and garlic. This easy stir-fry is packed with flavor and comes together beautifully for a delicious weeknight dinner served over fluffy jasmine rice.

Ingredients

  • 1.7 lb chicken thighs, cut into chunks
  • 4 tablespoons vegetable oil, divided
  • 6 tablespoons pineapple juice
  • 2 tablespoons chicken broth
  • 2 tablespoons light soy sauce
  • 1 tablespoon hoisin sauce
  • 2 colored bell peppers, cut into pieces
  • ½ small pineapple, cubed
  • 2 tablespoons garlic, finely chopped
  • 2 tablespoons fresh ginger, finely chopped
  • 1–2 teaspoons chili pepper
  • 2 green onions, sliced
  • Jasmine rice, for serving

Instructions

Prepare the sauce: In a small bowl, combine 6 tbs pineapple juice, 2 tbs chicken broth, 2 tbs light soy sauce, and 1 tbs hoisin sauce. Stir well and set aside.

Cook the vegetables and pineapple: Heat a skillet or wok over medium-high heat. Add 2 tablespoons of vegetable oil. Once hot, add the bell peppers and stir-fry until they begin to soften but still retain a little crunch. Add the cubed pineapple and cook until lightly caramelized. Remove the peppers and pineapple from the skillet and set aside.

Cook the chicken: Add the remaining 2 tablespoons of vegetable oil to the same skillet. Once hot, add the chicken chunks in an even layer and cook until browned and cooked through, with no pink remaining in the center. Add the chopped ginger and garlic, stirring for about 30–60 seconds until fragrant.

Add the sauce: Pour the prepared sauce into the skillet and sprinkle in the chili pepper. Stir well to coat the chicken, then allow the sauce to simmer until it reduces slightly and clings to the chicken.

Bring everything together: Return the cooked bell peppers and pineapple to the skillet. Toss everything together and cook for another 30 seconds, just long enough to warm the vegetables and pineapple through.

Garnish and serve: Sprinkle the sliced green onions over the stir-fry and serve immediately alongside freshly cooked jasmine rice.

Enjoy the perfect balance of sweet pineapple, savory sauce, tender chicken, and a hint of heat in every bite!
