
Peach Upside Down Cake is a simple, comforting treat worth making again.
Ingredients
For the peaches
- 2-3 large peaches sliced
- 1/2 cup salted butter, melted
- 3/4 cup brown sugar
For the cake
- 1/2 cup unsalted butter room temperature, cubed
- 3/4 cup granulated sugar
- 2 large eggs, room temperature
- 1 1/2 cups all purpose flour, sifted
- 1 tsp. Baking soda
- 1/2 tsp. Pink or sea salt
- 3/4 cup butter milk
- 1 tsp. Vanilla paste or extract
- measure and prepare all your ingredients before starting
Instructions
- Preheat oven to 350 F.
- Line a 9 inch cake pan with parchment paper, add the melted butter then arrange the peaches any way you like and sprinkle with 3/4 cup of brown sugar.
- Using an electric mixer beat the cubed butter with the sugar until creamy and fluffy about 3-5 minutes add the eggs one by one and beat until incorporated, scrape the sides and beat in the vanilla.
- Start adding the flour mixture and buttermilk by alternating while mixing on low speed. Don’t be alarmed if you see if you see the batter curdle in between it will all come together once you finish the ingredients.
- Add the batter to the peaches, smooth the top and bake for 45-55 minutes or until a toothpick comes out clean.
- Let cool for 15 minutes in the pan, run a butter knife all around before flipping on a plate.
- Enjoy warm you can also add a scoop of vanilla ice cream.
