I’m proud to bring you a recipe from my country, Palestine 🇵🇸 Layers of dough filled with a mixture of fresh za’atar, onions, and lots of olive oil. I grow fresh za’atar in my backyard, and the closest thing to za’atar from back home would be Italian or Mexican oregano. I hope you get to try this recipe, because it’s so delicious!

Ingredients

For the dough

  • 940 grams bread flour
  • 60 grams wheat flour
  • 18 grams powder milk
  • 3/4 tablespoons salt
  • 1/2 teaspoon sugar
  • 1/4 cup olive oil
  • 1 1/2 packet of
  • 24 ounce warm water + 2 tbs

For the filling

  • 1/3 cup extra virgin olive oil
  • 4 cups fresh za’atar stemmed and washed well. Roughly chopped
  • 1 large onion chopped
  • 1 tbs sumac
  • 1/2 tsp citric acid
  • Salt to taste and black pepper
  • Extra olive oil for the pan
